What is it about fajitas that we just can’t seem to resist? Is it the smell of smoke on a sizzling platter, filling the dining room as they make their way to your table? Or perhaps that tender bite of meat cooked to perfection rolled up in a warm flour “blanket?” And let’s not forget the array of toppings that beckon to be included in this Tex-Mex delicacy…cheese, sour cream, guacamole, melted butter, salsa…forgive us, we could go on. And on.

For many of you, fajitas are a menu staple just as much as iced tea. While others of you may offer them only as a weekly special. Or God and Texas forbid, some of you may not menu fajitas at all! GASP! But as we approach the best excuse to eat fajitas since the inception of dinner, a.k.a. Cinco de Mayo, we challenge you to give this rolled up king of southwest cuisine a new look.

Our fajitas come in a variety of flavors and cuts. For beef lovers, we offer both the inside and the outside skirt steak. Both available in popular local flavors, Dos Compadres and El Rancho Rojo, exclusively formulated for Gourmet Ranch. And for a premium experience, might we suggest “el mejor,” our inside skirt, Certified Hereford Beef fajitas. Our juicy and tender chicken fajitas are made from whole muscle breast meat and available in the Dos Compadres flavor profile.
